Mango Kulfi
My perfect summer afternoons consist of sitting in the room with my family, all together on the bed, watching T.V, eating Kulfi together, and having intellectual conversations about how Bollywood keeps getting better these days.
My family loves Mango, so generally I make Mango flavoured Kulfi/icecream only. But my recipe has a few modifications this time. For instance, since it is Navratri time right now, I haven't been using condensed milk, instead I've been using Malai (Fresh Cream). So if you are interested in learning how to make this slightly healthier, suitable for Navratri version, then continue reading.
Ingredients:
2.5 Cups Full Fat Milk
2 Cups Mango Puree
2 tbsp Malai (fresh cream)
2 tbsp almonds and pistachios chopped together
Few Strands of Saffron
1/2 tsp Cardamom powder
1/2 Cup Sugar
Direction:
Heat a pan and pour milk
Add saffron and cardamom powder and stir it till a boil comes
When a boil comes, leave it on low heat for 20-25 minutes
When milk thickens, add sugar and mix it (adjust sugar according to the taste of your mango)
Now add chopped almonds and pistachios
Add 2 tbsp Malai and mix it
Turn the flame off and thick milk cool down
Once that is done, add mango puree and mango pulp to it
Mix it well
Now pour in any mould of your choice, I used a matki
Garnish with saffron and dry fruits
Cover with a foil and keep them in the freezer overnight/7-8 hours
