Chicken Fried Rice

Some of you might not know this, but a while back, my family decided to become vegetarians. And it is such a big deal for us, because chicken always meant so much to all of us. It was a very important part of our lives. But when we went to Australia last year, we were shocked and kind of intimidated by how health conscious everyone was there. We were so inspired that we not only made exercise plans and promises, but for some crazy reason, we also decided to go full vegetarian.

Obviously, that didn't last long.

My family finally had chicken again yesterday and to break off this long vegetarian fast, we chose to make Chicken Fried Rice.

So here I am today with a chicken recipe after so long.


1 Cup Basmati Rice
Chicken breast pieces 2 cut into strips 1cup
For chicken marination
Black pepper powder 1/2teaspoon
Cornstarch 1tablespoon
Powder sugar 1teaspoon
Soya sauce 1tablespoon
Sesame oil 1tablespoon
Water 1tablespoon
For frying
Chopped spring onion bulb 2tablespoon
Chopped bell pepper 2tablespoon
Chopped beans 1 tablespoon
Chopped carrot 2tablespoon
Salt to taste
Soya sauce 1tablespoon
Red chilly Garlic sauce 1tablespoon
Vinegar 1tablespoon
Sesame oil 2tablespoon
Black pepper powder 1/2teaspoon
White pepper powder 1/2teaspoon
Chopped garlic 1teaspoon
Chopped ginger 1teaspoon
2 eggs


Step 1:
Boil rice upto 80-90%/ al dente
Drain the rice and keep them aside for 2-3 hours. I kept them for 1 hour.

Step 2:
Marinate the chicken-
Put chicken strips in a bowl and pour soya sauce, sesame oil, black pepper powder, salt, powdered sugar, corn starch, 1 tbsp water and mix them all together.
Keep them aside for 20 minutes.

Step 3:
In a pan, add sesame oil.
Add marinated chicken and saute it.
Leave it on low heat for five minutes. Make sure the lid is closed.
Open the lid after five minutes and if the chicken looks cooked, push it to the side and add beaten eggs(mixed with little salt and black pepper).
Scramble the eggs.

Step 4:
Cook the chicken and vegetable together-
In a hot pan,
Pour sesame oil, ginger and garlic
Saute it for a minute till it doesn't release its flavour.
Now add chopped spring onions and saute it until it gets translucent.
Pour soya sauce, chilli garlic sauce, and vinegar.
Add salt, black pepper powder, and white pepper powder.
Add chopped vegetables.
Saute it.
Add your chicken and scrambled eggs.
Add boiled rice and mix it all together.

It's ready to serve!
